-- links -- cookbook Sunday, May 27th, 2001 @ 10:40 am So, I'm of the opinion that Nuevo Mexicano cuisine has reached it's hight in my small New Mexico, home town of Deming. I'm always sorely disappointed in the Mexican food of other regions. The Caldo De Rez here in Houston can still be a nectar that has the power to heal, but most every thing else is lacking in either texture, flavor, aroma, or quality of ingredients. I do have to give Houston taquerias credit for their excellent rice, and tasty queso flamiado. They are both almost always top notch. My secret stash of New Mexico, red and green chili is my culinary savior when every atom of my being is homesick. Here in Houston I have found a cuisine of Latin America that I do find quite comforting though. El Pueblito, makes some top notch Guatemalan food. The Taste, textures and aromas are all superb! Also, to top it all off their presentation is always well done. I'm not a presentation whore. It is the least important quality of a good meal to me, but if everything else is wonderful a nice presentation can always be appreciated. I'm just going to give up trying to satisfy my yearnings for the cuisine of my homeland, and enjoy El Pueblito from now on. Love you guys. WE ALL FALL DOWN
