Possibly Heaven, Corel Draw X3, and off to the movies.
Saturday, Jan. 21, 2006 @ 4:15 p.m.

This day just keeps building and building upon itself. There will be absolutely no order to this entry.

Firstly, the food.

Rosemary roasted fingerling potatoes, a.k.a. Heaven.

2 lbs. Assorted fingerling potatoes
3/4 teaspoon old bay seasoning
3/4 teaspoon Cavenders Greek seasoning
1/4 teaspoon coarse Kosher salt
1 scant teaspoon flour
A bulb of garlic, peeled
2 Tablespoons fresh rosemary leaves bruised
1 teaspoons peanut oil
Mazola Canola cooking spray for the pan, I like this brand as its supposed to be free of additives
a drizzle of olive oil
Rice vinegar

Wash and scrub fingerlings, allow to drain for 15 minutes or so. To a preheated roasting pan, or heavy bottomed oven safe skillet add potatoes and roast at 450 degrees until skins are dry. This allows the oil to stick to the skins cleanly and gives a rather nice textural element to the potatoes. Remove from oven and add all oils except olive oil which will be added during the last 5 minutes of cooking. Mix all spices and flour together and sprinkle over the tops of the fingerlings. I use a silicon rubber spatula to stir the potatoes around and coat well with the flavorful ingredients. Roast for 15 minutes, at 400 degrees. Remove, stir, roast for a further 10 minutes, then reduce heat to 350 degrees for 20 minutes or until tender. Add olive oil in last 5 minutes of cooking. This helps preserve its full flavor but allows it to blend with the other flavorings. Remove from oven sprinkle with the vinegar and let rest till serving time. Also fond of these with fresh sage and Balsalmic vinegar.

Had the MOST lovely time last night with work friends and Corazon at Vivace on the hill. Conversation was spectacular. Layers revealed, new friendships and old strengthened. Kathleen has actually climbed the path to Manchu Pichu, at that divulged I wanted to throw my arms around her and just burrey my eyes in her sholder. Peru, just holds so much mistique for me. My meal consisted of PERFECTLY aldente Penne with Rapini, sausage, and roasted garlic in a very delicate and wonderfully flavorful broth. GORGEOUS, I tell you. The glass of red they brought me, the perfect foil. We walked the hill, had coffees at Flying Star and continued the lovely conversations. Home by 9:30 and all was lovely. Lovely, lovely, LOVELY.

Corel has released the newest encarnation of Draw. The new DRAW X3 is spectacular. I can not tell you how lovely the new features in its Photopaint are. Ive been thinking all week that purchasing Adobe Photoshop was going to be a necessity as all the literature revolves around it, but thanks to some lovely online tutorials and this new update, Photoshop seems completely unnecessary. Take a look at what I was able to do with the new photolab abilities, and the burn/dodge tool that was present on earlier versions, but I only recently learned how to use. (In the last week)

Anyway, happy as a lark today, and now I have to get ready to go to the movies. Much love to you.
